  • 1 cup buttermilk
  • 2 tablespoons Cajun seasoning, divided
  • 1 cup panko breadcrumbs
  • 3 cloves fresh garlic, minced
  • ½ cup mayonnaise
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and pepper to taste
  • Toasted brioche buns for serving

Instructions

  1. Marinate the chicken in buttermilk mixed with 1 tablespoon Cajun seasoning for at least 1 hour or overnight.
  2. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  3. Combine panko breadcrumbs with remaining Cajun seasoning in a bowl. Dredge marinated chicken in breadcrumb mixture until fully coated.
  4. Place chicken on the prepared baking sheet and bake for 20-25 minutes until golden brown and internal temperature reaches 165°F (74°C).
  5. While chicken bakes, mix mayonnaise, minced garlic, lemon juice, salt, and pepper in a bowl to make the garlic aioli.
