  • 2 medium Yukon Gold potatoes, diced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 3 sprigs fresh thyme
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Sourdough bread, for serving

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap the garlic bulb in foil with olive oil and roast for 30-35 minutes until golden and tender.
  2. In a large pot over medium heat, melt butter and sauté chopped onions until translucent (about 5-7 minutes).
  3. Add diced potatoes and vegetable broth. Bring to a boil, then reduce to a simmer. Stir in fresh thyme.
  4. After simmering for 20 minutes or until potatoes are tender, squeeze roasted garlic into the pot. Use an immersion blender to puree until smooth.
