  • 1 lb fresh or frozen shrimp, peeled and deveined
  • 1 lb smoked sausage (preferably Andouille), sliced
  • 1 cup diced onion
  • 1 cup diced bell peppers (green and red)
  • 1 cup chopped celery
  • 14.5 oz can diced tomatoes
  • 1 cup sliced okra (fresh or frozen)
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tsp Cajun seasoning
  • Salt and black pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Heat a large pot over medium heat. Add sliced sausage and cook until browned, about 5 minutes. Remove sausage, leaving drippings in the pot.
  2. In the same pot, sauté onions, bell peppers, celery, and garlic until softened (about 7 minutes).
  3. Stir in Cajun seasoning, salt, black pepper, and canned tomatoes. Cook for an additional 2 minutes.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer for about 20 minutes.
  5. Add okra and shrimp to the pot; cook until shrimp are pink and opaque (approximately 5 minutes).
  6. Serve hot in bowls with chopped green onions on top if desired.
