  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Rinse wild rice under cold water until clear. In a pot, combine rice and broth; bring to boil. Reduce heat, cover, and simmer for 40-45 minutes until tender.
  2. In a large pot over medium heat, heat olive oil. Sauté onion, carrots, and celery for about 5 minutes until tender.
  3. Add garlic and mushrooms; cook for an additional 5 minutes until mushrooms soften.
  4. Stir in cooked wild rice along with its liquid and remaining broth. Add thyme, salt, and pepper; mix well.
  5. Bring to a gentle boil again, then reduce heat and simmer uncovered for another 15-20 minutes.
