  • 1 medium butternut squash (about 1 cup roasted)
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 cup cold unsalted butter
  • 3/4 cup whole milk

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Halve the butternut squash, remove seeds, place cut side down on a baking sheet, and roast for 30-40 minutes until tender. Once cool, scoop out the flesh.
  3. In a mixing bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt. Cut in cold butter until crumbly. Fold in roasted squash.
  4. Gradually add milk while mixing gently until combined; avoid overmixing.
  5. Turn dough onto a floured surface and shape into a circle about one inch thick. Cut into triangles.
  6. Place on prepared baking sheet, brush tops with milk, and bake for 15-20 minutes until golden brown.
