  • 2 medium carrots (chopped)
  • 2 medium Yukon Gold potatoes (cubed)
  • 1 medium onion (chopped)
  • 2 stalks celery (chopped)
  • 4 cups low-sodium chicken broth
  • 2 tsp fresh thyme leaves (or 1 tsp dried thyme)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Dice the chicken breasts and chop the vegetables into uniform pieces.
  2. Set your Instant Pot to 'Sauté' mode. Heat olive oil, then add onions and celery; sauté for 3-4 minutes until softened.
  3. Add the diced chicken, season with salt and pepper, and cook for an additional 5 minutes until browned.
  4. Pour in the chicken broth; add carrots, potatoes, and thyme. Stir well.
  5. Seal the lid and set to 'Manual' for 10 minutes on high pressure. Allow natural pressure release for 10 minutes before manually releasing any remaining pressure.
  6. Open the lid carefully, stir the stew gently, and serve warm.
