  • 2 cups cooked turkey, shredded or diced
  • 1 cup carrots, diced
  • 1 cup peas (fresh or frozen)
  • 1 cup corn (fresh or frozen)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 3 tbsp all-purpose flour
  • 2 tsp olive oil
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray and set aside.
  2. In a large skillet over medium heat, add olive oil. Sauté onion until translucent, then add garlic, carrots, peas, and corn. Cook until tender.
  3. Sprinkle flour over the vegetable mixture and stir well. Gradually pour in chicken broth while stirring constantly. Add heavy cream and let simmer until thickened.
  4. Stir in shredded turkey until combined. Remove from heat and let cool slightly.
  5. Roll out the pie crust on a floured surface; place half into the prepared baking dish. Pour turkey filling into the crust and cover with the remaining pie crust. Seal edges and cut slits on top for steam.
  6. Bake for about 30-35 minutes until golden brown. Allow cooling for five minutes before serving.
