  • 2 cups wild mushrooms (shiitake, oyster, or cremini), sliced
  • 1 large yellow onion, finely chopped
  • 2 cups fresh kale, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Clean the wild mushrooms under cold water and slice them. Chop the onion and garlic finely; roughly chop the kale.
  2. Heat olive oil in a large pot over medium heat. Add onions and sauté until golden brown (15-20 minutes).
  3. Stir in the sliced mushrooms and cook for another 5-7 minutes until softened. Add minced garlic in the last minute.
  4. Pour in the vegetable broth, scraping any bits from the pot. Add thyme and let it simmer uncovered for about 10 minutes.
  5. Stir in the chopped kale and simmer for an additional 5 minutes until wilted.
  6. Taste and adjust seasoning with salt and pepper before serving hot.
