  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup breadcrumbs (plain or Italian-seasoned)
  • 1 large egg
  • 1/2 cup dry red wine
  • 1/2 cup low-sodium beef broth
  • 2 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil for searing

Instructions

  1. In a large bowl, combine ground beef, chopped onion, minced garlic, breadcrumbs, egg, salt, and pepper. Mix until just combined; avoid overmixing to keep meatballs tender.
  2. Shape the mixture into uniform balls about one inch in diameter and place on a parchment-lined baking sheet.
  3. Heat olive oil in a skillet over medium-high heat. Sear the meatballs in batches until golden brown on all sides (about 5-7 minutes). Transfer back to the baking sheet.
  4. In the same skillet, add red wine and scrape up browned bits. Simmer for three minutes; then add beef broth and herbs; stir well.
  5. Return meatballs to the skillet, cover, and simmer on low heat for about 30 minutes until cooked through and tender.
