  • 1 cup full-fat coconut milk (240ml)
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • ¼ cup nutritional yeast (25g)
  • Salt and pepper to taste

Instructions

  1. Prepare the vegetables: Peel and dice the potatoes, carrots, and celery; chop the onion; and mince the garlic. Set aside.
  2. Sauté aromatics: In a large pot over medium heat, add a splash of olive oil. Sauté the diced onions until translucent (about 5 minutes). Add minced garlic and cook for another minute until fragrant.
