  • 2 celery stalks, chopped
  • 1 medium zucchini, diced
  • 4 cups low-sodium vegetable broth
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 cups fresh spinach

Instructions

  1. Sauté the onion in olive oil over medium heat for about 5 minutes until translucent. Add garlic and cook for an additional minute.
  2. Stir in carrots and celery; cook for another 5 minutes until they soften.
  3. Add zucchini along with salt and pepper; cook for 3 more minutes.
  4. Pour in vegetable broth and bring to a gentle boil. Reduce heat and simmer uncovered for 20 minutes.
  5. Use an immersion blender to puree the soup until smooth; stir in coconut milk.
  6. Just before serving, add fresh spinach and allow it to wilt slightly.
