  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 6 (6-inch) flour tortillas
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp olive oil (plus extra for brushing)
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ½ cup full-fat sour cream
  • Juice of 1 lime

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. In a skillet over medium heat, add olive oil. Season chicken with cumin, chili powder, garlic powder, salt, and pepper; cook until no longer pink (6-8 minutes per side). Shred cooked chicken.
  3. Warm tortillas in a skillet for about 30 seconds on each side until pliable.
  4. Place about two tablespoons of shredded chicken and some cheese in the center of each tortilla. Roll tightly and place seam-side down on the baking sheet.
