  • 6 high-quality Irish sausages (about 1 lb)
  • 2 lbs Russet potatoes, peeled and cubed
  • 4 tbsp unsalted butter
  • 1/2 cup heavy cream (or milk)
  • 1 onion, finely chopped
  • 2 cups beef broth
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
  2. Place sausages on the tray and bake for 25-30 minutes until golden brown.
  3. Boil peeled and cubed potatoes in salted water for about 15-20 minutes until tender.
  4. In a saucepan over medium heat, melt butter and sauté chopped onion until soft. Stir in flour to create a roux, then gradually whisk in beef broth until smooth; simmer until thickened.
  5. Drain potatoes, return them to the pot, and mash with butter, heavy cream, salt, and pepper until creamy.
