  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp pepper
  • Cooking spray (for baking)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp mirin

Instructions
