  • 1 cup cucumber (diced)

  • 1 avocado (sliced)
  • 2 tbsp extra virgin olive oil
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp rice vinegar

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine quinoa and water/broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until liquid is absorbed. Fluff with a fork.
