  • 2 lbs pork shoulder, cut into chunks
  • 2 cups hominy, rinsed (canned or soaked dried)
  • 6 fresh tomatillos, diced
  • 2 jalapeños, diced (seeds removed for milder heat)
  • 1 cup fresh cilantro, chopped
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups water
  • Salt to taste
  • Olive oil for searing

Instructions

  1. Chop the onion and mince the garlic. Dice the tomatillos and jalapeños separately. Rinse canned hominy under cold water.
  2. In a large pot over medium-high heat, add olive oil. Sear pork shoulder until browned on all sides (about 5-7 minutes). Remove from pot.
  3. In the same pot, sauté onions until translucent. Add garlic and cook until fragrant (about 1 minute).
  4. In a blender, combine diced tomatillos and jalapeños with a bit of water; blend until smooth.
  5. Return seared pork to the pot along with hominy and verde sauce. Pour in enough water to cover by one inch; bring to a simmer.
  6. Cover and simmer on low heat for about 2 hours or until pork shreds easily.
