  • 8 oz short pasta (penne or fusilli)
  • 2 cups Brussels sprouts (trimmed and halved)
  • 3 cloves garlic (minced)
  • ½ cup Parmesan cheese (freshly grated)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by removing casings from sausage, chopping garlic, and halving Brussels sprouts.
  2. In a large skillet over medium heat, add olive oil. Once hot, crumble in the sausage and cook until browned (about 5-7 minutes).
  3. Add halved Brussels sprouts to the skillet and sauté for another 5-6 minutes until tender.
  4. Stir in minced garlic and cook for an additional minute until fragrant.
  5. Meanwhile, boil salted water in a pot; cook pasta according to package instructions until al dente. Reserve some pasta water before draining.
  6. Combine cooked pasta with sausage and Brussels sprouts in the skillet. Use reserved pasta water to create a light sauce if needed. Toss everything together over low heat.
  7. Serve garnished with freshly grated Parmesan cheese.
