  • 1 pound (450g) lean ground beef
  • 1 red bell pepper, diced
  • 1 medium yellow onion, finely chopped

  • 2 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro, for garnish
  • 1 ripe avocado, sliced

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Spread diced sweet potatoes on the baking sheet. Drizzle with olive oil and season with salt and pepper. Roast for about 25 minutes until tender.
  3. In a large skillet over medium heat, cook ground beef until browned; drain excess fat.
  4. Add onions, red bell pepper, and garlic to the skillet. Sauté until softened (about 5 minutes). Stir in cumin and chili powder.
  5. Fold roasted sweet potatoes into the beef mixture gently.
  6. Serve hot, garnished with cilantro and sliced avocado.
