  • 1/2 cup plain breadcrumbs
  • 1/4 cup grated Parmesan cheese

  • 1/2 onion, finely chopped
  • 1 egg
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup canned pumpkin puree (not pie filling)
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1 tbsp fresh sage, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, garlic, onion, egg, salt, and pepper. Mix until fully incorporated.
  2. Shape mixture into small meatballs about one inch in diameter and place them on a parchment-lined baking sheet.
  3. Bake meatballs for 20-25 minutes until cooked through and golden brown.
  4. Meanwhile, in a skillet over medium heat, combine pumpkin puree and chicken broth. Gradually stir in heavy cream and add sage, salt, and pepper to taste.
  5. Once meatballs are done baking, transfer them into the skillet with the sauce and gently toss until coated.
