  • 8 oz rotini pasta
  • 1 lb lean ground beef or turkey
  • 2 tbsp taco seasoning
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup bell peppers, diced (any color)
  • 1 cup cherry tomatoes, halved
  • 1 cup corn (fresh or frozen)
  • ½ cup red onion, diced
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook until al dente according to package instructions. Drain and rinse under cold water.
  2. Brown the Meat: In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat if needed. Stir in taco seasoning along with a splash of water and simmer for about two minutes.
  3. Prepare Vegetables: While the meat cooks, chop bell peppers and red onion into small pieces. Halve cherry tomatoes and rinse black beans.
  4. Combine Ingredients: In a large mixing bowl, combine cooked pasta, seasoned meat, chopped vegetables, corn, and black beans. Toss gently to mix evenly.
  5. Add Dressing: Drizzle fresh lime juice over the mixture and toss again until all ingredients are coated.
