  • 1 cup fresh spinach, washed
  • 3 cloves garlic, minced
  • 1 medium yellow onion, finely chopped
  • 2 tbsp Dijon mustard
  • 1 tsp fresh thyme leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). In a skillet, heat olive oil over medium heat. Add onions and garlic; sauté until translucent. Stir in mushrooms and cook until browned.
  2. Add spinach and cook until wilted. Season with thyme, salt, and pepper; remove from heat and let cool slightly.
  3. Roll out puff pastry on a floured surface. Spread Dijon mustard in the center and place mushroom mixture on top, leaving edges clear for sealing.
  4. Fold pastry over filling, seal edges tightly, and place seam-side down on a parchment-lined baking sheet.
