  • 2 cups bell peppers (mixed colors, sliced)
  • 1 cup red onion (sliced)
  • 2 medium zucchinis (sliced into half-moons)
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Slice sausage links into bite-sized pieces. Cut bell peppers, zucchini, and red onion into similar sizes.
