Ingredients

Scale
  • 1 lb sirloin or flank steak
  • 1 cup long-grain white rice
  • 1 cup queso cheese (or cheese sauce)
  • 1 cup bell peppers (diced; mix of red and green)
  • 1 medium onion (diced)
  • 2 tsp olive oil (for cooking)
  • 2 cups water or broth
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. 1. Sear the Steak: In a large skillet over medium-high heat, add olive oil. Season the steak with salt, pepper, garlic powder, and cumin. Sear for 3-4 minutes on each side until browned. Remove from skillet and let rest.
  2. 2. Sauté Vegetables: Using the same skillet, add more olive oil if needed. Add diced onions and bell peppers; sauté for about 5 minutes until softened.
  3. 3. Cook Rice: Stir in the rice and add water or broth. Bring to a boil, cover, reduce heat to low, and simmer for 15-18 minutes until liquid is absorbed.
  4. 4. Add Cheese: Remove the lid and stir in queso cheese until melted. Slice the rested steak into thin strips and fold them into the rice mixture.
  5. 5. Serve: Mix well and serve hot. Optionally top with fresh cilantro or jalapeños.
