  • 1 cup fresh corn kernels (or frozen, thawed)
  • 1 cup jasmine rice
  • 1 red bell pepper, diced
  • 2 tbsp olive oil
  • 2 tbsp freshly squeezed lime juice
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Rinse jasmine rice under cold water until clear. Chop chicken into bite-sized pieces; season with salt and pepper.
  2. In a medium pot, combine rinsed rice with water according to package instructions. Bring to a boil; reduce heat, cover, and simmer for 15 minutes until water is absorbed.
  3. Heat olive oil in a large skillet over medium heat. Sauté chicken pieces for 5-7 minutes until golden brown and cooked through. Remove from skillet.
  4. In the same skillet, add diced bell pepper and corn; sauté for 4-5 minutes until tender-crisp.
  5. Return chicken to the skillet; stir in lime juice and chili powder. Cook for an additional minute.
  6. Serve cooked rice in bowls topped with the corn-chicken mixture.
