  • 2 lbs beef chuck roast, cut into cubes
  • 1 cup fresh apple cider
  • 3 medium carrots, sliced
  • 2 stalks celery, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 sprigs fresh thyme (or 1 tsp dried thyme)
  • 2 bay leaves
  • Salt and pepper to taste
  • 4 cups mashed potatoes (prepared from about 2 lbs Yukon Gold potatoes)

Instructions

  1. Chop all vegetables: dice onion and celery, slice carrots, mince garlic. Season beef cubes with salt and pepper.
  2. In a Dutch oven, heat 1 tablespoon oil over medium-high heat. Sear beef until browned (5-7 minutes); remove and set aside.
  3. In the same pot, sauté onions, celery, and carrots until softened (about 5 minutes). Add garlic and cook for an additional minute.
  4. Return beef to the pot. Pour in apple cider and add thyme and bay leaves. Bring to a boil, then reduce heat to low.
  5. Cover and simmer for at least two hours or until beef is tender. Adjust seasoning as needed.
  6. Serve stew over prepared mashed potatoes.
