  • 1 lb lean ground beef
  • ½ cup BBQ sauce
  • 1 oz ranch seasoning mix (about 1 packet)
  • 8 oz short pasta (penne or rotini)
  • 1 cup sharp cheddar cheese, shredded
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth

Instructions

  1. In a large bowl, combine ground beef, half of the BBQ sauce, ranch seasoning, and diced onion. Mix well and form into 1-inch meatballs.
  2. Heat a nonstick skillet over medium heat. Cook meatballs in batches for 8-10 minutes until browned and cooked through. Remove from skillet.
  3. Boil salted water in a separate pot and cook pasta according to package instructions; reserve ½ cup of pasta water before draining.
  4. In the same skillet, sauté minced garlic for one minute. Add chicken broth and remaining BBQ sauce; simmer for a few minutes before stirring in cheddar cheese.
  5. Return drained pasta and meatballs to the skillet. Stir well to combine; use reserved pasta water for consistency if needed.
