  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 medium yellow onion, chopped
  • 2 cups mixed bell peppers, chopped
  • 3 cloves garlic, minced
  • 1 cup long-grain white rice
  • 1.5 cups low-sodium chicken broth
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Prepare your ingredients by chopping the onion and bell peppers, and mincing the garlic.
  2. Turn on your Instant Pot to the sauté function. Add a drizzle of olive oil and sauté the onion and bell peppers until softened (about 3-4 minutes).
  3. Add the chicken breasts along with cumin, chili powder, salt, and pepper to the pot.
  4. Pour in the rice evenly over the chicken mixture and then add the chicken broth gently.
  5. Seal the Instant Pot lid and cook on high pressure for 10 minutes. Allow for a natural release of pressure for 5 minutes before manually releasing any remaining steam.
  6. Open the lid carefully, fluff the rice with a fork, and serve topped with fresh cilantro and a dollop of sour cream or Greek yogurt.
