  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 medium fresh beets, roasted
  • 4 oz feta cheese, crumbled
  • 4 cups fresh spinach or arugula
  • 1/2 red onion, thinly sliced
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp honey

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap the whole beets in aluminum foil and roast for 40-60 minutes until fork-tender. Allow to cool before peeling.
  2. In a large bowl, combine spinach or arugula with drained chickpeas and sliced red onion.
  3. Once cooled, slice the roasted beets into bite-sized pieces and gently fold them into the salad mixture.
  4. Sprinkle crumbled feta over the top.
  5. In a small bowl, whisk together olive oil, balsamic vinegar, and honey; season with salt and pepper to taste.
  6. Drizzle dressing over the salad just before serving and toss gently.
