  • 1 medium spaghetti squash
  • 1 lb lean ground turkey
  • 2 cups marinara sauce (preferably no added sugars)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Halve the spaghetti squash lengthwise and scoop out the seeds. Drizzle olive oil on cut sides, season with salt and pepper, then place cut-side down on the baking sheet.
  3. Roast for 30-40 minutes until fork-tender.
  4. While the squash roasts, heat olive oil in a skillet over medium heat. Sauté diced onion and minced garlic until translucent.
  5. Add ground turkey and Italian seasoning; cook until browned.
  6. Stir in marinara sauce, allowing it to simmer on low heat for about 10 minutes.
  7. Once the squash is done roasting, use a fork to scrape out strands into bowls. Top with turkey marinara sauce.
