  • 6 cups low-sodium vegetable broth
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp ground cumin
  • 1/2 tsp black pepper

Instructions

  1. Rinse the beans under cold water. Soak them overnight or boil for 2 minutes and let sit for an hour before draining.
  2. In a large pot over medium heat, add olive oil and sauté onions, garlic, carrots, and celery for about 5 minutes until tender.
  3. Add vegetable broth and soaked beans to the pot. Stir in diced tomatoes with their juices.
