  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 2 medium potatoes (Yukon Gold), peeled and diced
  • 1 can (14.5 oz) diced tomatoes with juice
  • 4 cups low-sodium vegetable broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add 1 tablespoon olive oil. Sauté the onions and garlic for about five minutes until softened.
  2. Increase heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula (about seven minutes). Drain excess fat.
  3. Stir in the diced tomatoes (with juice) and vegetable broth; bring to a simmer.
  4. Add the diced potatoes and Italian seasoning. Stir well and cook on low heat for about twenty minutes until potatoes are tender.
  5. Taste and adjust seasoning with salt and pepper as needed.
