  • 1 lb ground moose meat
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 28 oz can diced tomatoes (with juice)
  • 1 can kidney beans (15 oz), rinsed
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • Salt & pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add ground moose meat and cook until browned, breaking it apart as it cooks (about 5 minutes).
  2. Stir in chopped onion, bell peppers, and minced garlic. Sauté until softened (about 4 minutes).
  3. Add canned tomatoes (with juice), kidney beans, chili powder, and cumin. Stir well to combine.
  4. Reduce heat to low and cover partially; let simmer for at least 30 minutes, allowing flavors to meld.
  5. Taste and season with salt and pepper before serving hot.
