  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 4 (8 oz) packages cream cheese, softened
  • 1 ¼ cups granulated sugar
  • 2 tsp vanilla extract
  • 4 large eggs, room temperature
  • ½ cup unsweetened cocoa powder
  • 2 cups fresh strawberries, sliced

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a springform pan.
  2. In a bowl, mix graham cracker crumbs with melted butter until combined. Press into the bottom of the pan.
  3. Beat cream cheese until smooth. Gradually add sugar and mix well. Add eggs one at a time, mixing after each addition. Stir in vanilla.
  4. Divide half of the mixture into another bowl and mix in cocoa powder.
  5. Spoon alternating dollops of plain and chocolate mixtures into the crust. Use a knife to swirl gently.
  6. Top with sliced strawberries and bake for 50-60 minutes or until set but slightly jiggly in the center. Cool before refrigerating for at least four hours or overnight.
