  • 8 oz fresh oyster mushrooms, sliced
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • ½ cup grated parmesan cheese
  • 2 tbsp extra virgin olive oil
  • ¼ cup fresh parsley, chopped

Instructions

  1. 1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package instructions. Reserve ½ cup of pasta water and drain the rest.
  2. 2. Sauté the mushrooms: In a skillet over medium heat, heat olive oil. Add minced garlic and sauté for about 1 minute until fragrant. Add sliced oyster mushrooms and cook until soft and golden brown (about 5 minutes).
  3. 3. Create the sauce: Lower the heat and pour in heavy cream. Stir well and let it simmer for about 2 minutes until slightly thickened.
  4. 4. Combine pasta and sauce: Add drained pasta directly into the skillet with the sauce. Toss together, adding reserved pasta water gradually until desired consistency is reached.
  5. 5. Finish with cheese: Remove from heat and stir in grated parmesan cheese until melted. Season with salt and pepper to taste, then garnish with chopped parsley.
