  • 2 cups sweet potatoes (mashed)
  • 16 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter (melted)

Instructions

  1. Preheat oven to 400°F (200°C). Bake pierced sweet potatoes for 45-60 minutes until tender. Cool slightly and peel.
  2. Mix graham cracker crumbs with melted butter; press into the bottom of a springform pan. Bake at 350°F (175°C) for 10 minutes.
  3. Beat cream cheese until smooth; add sugars and vanilla. Incorporate eggs one at a time until fully mixed.
  4. Mash cooled sweet potatoes and fold into cream cheese mixture with cinnamon and nutmeg.
  5. Pour filling over crust and bake at 325°F (160°C) for about 60 minutes or until set but slightly jiggly. Cool in oven for one hour.
  6. Chill for at least four hours before slicing and serving.
