  • 4 oz fresh ramen noodles
  • 4 cups low-sodium chicken broth
  • 1 cup full-fat coconut milk
  • 2 tbsp miso paste (white or red)
  • 1/2 cup sliced green onions
  • 1/2 cup julienned carrots
  • 1/2 cup bok choy (optional)
  • 2 soft-boiled eggs
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sriracha or chili oil (optional)

Instructions

  1. In a large pot, combine chicken broth, coconut milk, and miso paste over medium heat. Stir until miso dissolves and let simmer.
  2. Cook ramen noodles in boiling water according to package instructions until al dente. Drain and set aside.
  3. Sauté green onions and carrots in the broth pot for about 3 minutes until softened.
  4. Add cooked noodles to the pot and stir to combine with the vegetables and broth.
  5. Soft-boil eggs for 6-7 minutes, then cool, peel, and slice in half.
  6. Serve hot in bowls topped with halved eggs, additional veggies, soy sauce, and sriracha.
