  • 1 cup pureed butternut squash (roasted)
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour (or whole wheat)
  • 3/4 cup granulated sugar (or coconut sugar)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking dish or line it with parchment paper.
  2. Roast the butternut squash at 350°F for 30-35 minutes until tender, then puree until smooth.
  3. In a medium bowl, whisk together cocoa powder, flour, baking powder, and salt.
  4. In a large mixing bowl, combine pureed squash, sugar, eggs, and vanilla; mix until smooth.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Pour batter into the prepared baking dish and bake for 25-30 minutes or until a toothpick comes out with moist crumbs.
