  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup freshly grated Asiago cheese
  • 1 lb potato gnocchi
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 4 cloves garlic (minced)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper (to taste)

Instructions

  1. Season chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat and cook the chicken for 6-7 minutes on each side until golden brown. Remove and set aside.
  2. In the same skillet, sauté minced garlic for about a minute until fragrant.
  3. Pour in heavy cream and scrape up any bits from the pan; gradually add Asiago cheese, stirring until melted and smooth.
  4. Add fresh spinach to the sauce and cook until wilted (about 1 minute).
  5. Boil water in another pot; cook gnocchi according to package instructions until they float, then drain.
  6. Return chicken to the skillet, add gnocchi, and gently combine everything until coated with sauce. Heat through for another minute before serving.
