  • 4 boneless, skinless chicken breasts
  • 8 oz cream cheese, softened
  • 2 cups fresh spinach, chopped
  • 1 tsp garlic powder
  • 1 cup shredded mozzarella cheese
  • 1 cup low-sodium chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper and place them in the prepared baking dish.
  3. In a bowl, mix cream cheese, garlic powder, and chopped spinach until smooth. Spread this mixture over each chicken breast.
  4. Sprinkle shredded mozzarella over the top of each filled chicken breast.
  5. In another bowl, whisk together chicken broth, oregano, and thyme. Pour around the edges of the baking dish.
  6. Cover with foil and bake for 25 minutes; then remove foil and bake for an additional 15-20 minutes until bubbly and golden brown.
