  • 2 cups old-fashioned rolled oats
  • 1 cup dried cranberries (unsweetened)
  • 1/2 cup nut butter (almond or peanut)
  • 1/4 cup honey or maple syrup
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Mix in the nut butter until fully combined.
  4. In another bowl, combine oats, cranberries, baking powder, and salt.
  5. Gradually mix the dry ingredients into the banana-nut butter mixture, adding honey or maple syrup as well.
  6. Spread the mixture evenly in the prepared baking dish and bake for 25-30 minutes or until golden brown. Allow to cool before cutting into squares.
