  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 4 cloves fresh garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp honey
  • 1 tsp red chili flakes (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Spray a baking dish with nonstick spray and season chicken breasts with salt and pepper.
  2. In a shallow bowl, mix flour with paprika and garlic powder. In another bowl, beat the eggs lightly. In a third bowl, place panko breadcrumbs mixed with salt.
  3. Dredge each chicken breast in flour, dip in eggs, then coat with panko breadcrumbs.
  4. In a mixing bowl, whisk together soy sauce, rice vinegar, honey, and red chili flakes.
  5. Place coated chicken in the baking dish and drizzle half of the sauce over the top.
  6. Bake for 25-30 minutes until golden brown and internal temperature reaches at least 165°F (75°C). Drizzle remaining sauce before serving.
