  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup BBQ sauce
  • 1 cup shredded sharp cheddar cheese
  • 2 green onions, chopped
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the sweet potatoes well and pierce them several times with a fork.
  2. Place the sweet potatoes on a baking sheet and bake for about 45-50 minutes until tender.
  3. In a skillet over medium heat, heat olive oil. Season chicken with salt and pepper, cooking for about 6-7 minutes per side until fully cooked.
  4. Shred the cooked chicken and mix it with BBQ sauce in a bowl.
  5. Once the sweet potatoes are baked, cut them open lengthwise, fluffing the insides with a fork. Fill each potato with the BBQ chicken mixture.
  6. Top with shredded cheddar cheese and return to the oven for another 10 minutes until the cheese is melted.
  7. Garnish with chopped green onions before serving.
