  • 1/2 head green cabbage (chopped)
  • 1 cup sharp cheddar cheese (shredded)
  • 1 medium onion (chopped)
  • 2 garlic cloves (minced)
  • 2 large eggs (beaten)
  • 1/2 cup plain breadcrumbs
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 350°F (175°C) and grease a baking dish with nonstick spray.
  2. Blanch chopped cabbage in boiling salted water for about 5 minutes; drain well.
  3. Sauté chopped onion and minced garlic in olive oil over medium heat until soft, about 3-4 minutes.
  4. In a mixing bowl, combine blanched cabbage, sautéed onion and garlic, beaten eggs, shredded cheddar cheese, salt, and pepper. Mix well.
  5. Transfer mixture to the prepared baking dish. Top with breadcrumbs and additional cheese.
  6. Bake for 30-35 minutes until golden brown and bubbly.
