  • 9 lasagna noodles
  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups fresh baby spinach
  • 1 cup ricotta cheese
  • 1 ½ cups shredded part-skim mozzarella cheese (divided)
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 2 garlic cloves (minced)
  • Salt and pepper to taste
  • 2 tsp olive oil

Instructions

  1. 1. Preheat oven to 375°F (190°C). Cook the lasagna noodles according to package instructions until al dente; drain and lay flat.
  2. 2. In a skillet, heat olive oil over medium heat. Season chicken with salt and pepper, cook until golden (6-7 minutes per side). Shred the cooked chicken.
  3. 3. In a bowl, mix shredded chicken with ricotta, spinach, half of the mozzarella, salt, and pepper.
  4. 4. For the sauce, sauté minced garlic in butter for one minute; add heavy cream and simmer. Whisk in Parmesan until melted.
  5. 5. Spread some sauce in a baking dish. Place filling on each noodle, roll tightly, and place seam-side down in the dish. Cover with remaining sauce and mozzarella.
  6. 6. Bake covered for 20 minutes; uncover and bake an additional 10 minutes until bubbly.
