  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 soft flour or corn tortillas
  • 2 cups shredded cheddar and Monterey Jack cheese (divided)
  • 1 cup sliced fresh jalapeños (adjust to taste)
  • 1 can (4 oz) canned green chiles
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 2 tsp chili powder

Instructions

  1. Preheat the oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, heat 1 tbsp olive oil. Season chicken with salt and pepper; cook for 6-8 minutes on each side until fully cooked. Let cool slightly before shredding.
  3. In a mixing bowl, combine cream of chicken soup, sour cream, chili powder, and half of the shredded cheese.
  4. Fill each tortilla with shredded chicken, jalapeños, and green chiles; roll tightly and place seam-side down in the baking dish. Pour sauce over the enchiladas.
  5. Top with remaining cheese, cover with foil, and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until golden brown.
