  • 1/2 cup full-fat coconut milk
  • 1 tbsp fresh ginger, grated
  • 3 cloves garlic, minced
  • 1/2 cup plain breadcrumbs
  • 1/4 cup chopped cilantro
  • For the Sauce: 2 tbsp low-sodium soy sauce
  • Juice of 1 lime

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, coconut milk, ginger, garlic, breadcrumbs, and cilantro. Mix until just combined.
  3. Shape the mixture into small meatballs (about 1 inch in diameter) and place on the prepared baking sheet.
  4. Bake for 20-25 minutes until golden brown and cooked through (internal temperature should reach at least 165°F / 74°C).
  5. While baking, whisk together soy sauce and lime juice in a small bowl.
  6. Serve warm with the sauce drizzled over the meatballs.
