  • 1 lb (450g) lean ground chicken
  • 1 cup (240ml) full-fat coconut milk
  • 2 tbsp fresh ginger, grated
  • 3 cloves garlic, minced
  • 2 tbsp red curry paste (adjust for spice preference)
  • Salt and pepper to taste
  • ½ cup (120ml) low-sodium chicken broth
  • 2 tbsp lime juice (freshly squeezed)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground chicken, coconut milk, ginger, garlic, red curry paste, salt, and pepper. Mix until well incorporated.
  3. Form the mixture into meatballs about one inch in diameter and place them on the prepared baking sheet.
  4. Bake for 20-25 minutes or until golden brown and cooked through (internal temperature should reach 165°F or 74°C).
  5. While the meatballs bake, mix chicken broth and lime juice in a saucepan over medium heat until warmed through.
