  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp fresh ginger, grated
  • 4 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 2 tbsp fish sauce
  • Juice of 1 lime
  • Salt and pepper to taste
  • 1 tbsp vegetable oil

Instructions

  1. Trim excess fat from chicken thighs and season both sides with salt and pepper.
  2. Heat oil in a large skillet over medium heat. Sauté garlic and ginger until fragrant (about 1 minute).
  3. Add chicken thighs to the skillet and brown on each side for about 5 minutes.
  4. Pour in coconut milk and add sliced bell pepper and fish sauce; stir well.
  5. Bring to a gentle simmer, cover, and cook on low heat for 20-25 minutes until chicken is tender.
  6. Remove from heat and stir in lime juice before serving.
