  • 1 lb lean ground turkey
  • 1 cup fresh cranberries, chopped
  • 1 cup breadcrumbs (fresh or dried)
  • 1 medium onion, finely chopped
  • 1 cup celery, chopped
  • 2 tsp fresh thyme, minced
  • 2 tsp fresh sage, minced
  • 1 large egg
  • ½ cup low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, warm olive oil and sauté onions and celery until softened (5-7 minutes). Stir in thyme and sage.
  3. In a large bowl, combine ground turkey, sautéed vegetables, breadcrumbs, cranberries, beaten egg, chicken broth, salt, and pepper. Mix well.
  4. Form mixture into golf ball-sized balls and arrange on the prepared baking sheet.
  5. Bake for 25-30 minutes until golden brown and cooked through (internal temperature of at least 165°F).
