  • 34 boneless, skinless chicken breasts (1 lb)
  • 2 cloves fresh garlic, minced
  • 8 flour tortillas (8-inch)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 oz cream cheese
  • 1 cup enchilada sauce (store-bought or homemade)
  • ½ cup sour cream

Instructions

  1. Preheat oven to 350°F (175°C) and spray a baking dish with nonstick cooking spray. Season chicken with salt and pepper.
  2. Cook seasoned chicken in a skillet over medium heat for about 6-7 minutes per side until fully cooked. Remove from heat and shred.
  3. In a saucepan, combine queso cheese, cream cheese, sour cream, and half of the enchilada sauce. Stir over low heat until melted.
  4. Spread some sauce on the bottom of the baking dish. Fill tortillas with shredded chicken, roll tightly, and place seam-side down in the dish. Pour remaining sauce over enchiladas.
  5. Cover with foil and bake for 20 minutes. Remove foil, sprinkle remaining cheese on top, and bake uncovered for an additional 10 minutes until bubbly.
